Shippo Miso&Owari Cloisonné


Ama City, Aichi, is where Japan’s rich miso heritage and world-renowned Shippo-yaki cloisonné enamel artistry come to life.
Visitors can see, learn, and create while experiencing Japan’s cherished culinary heritage—dating back to the Sengoku period of the 16th to 17th centuries—and the elegant beauty of traditional decorative art.




Sato Brewery is the last remaining miso brewery in the Bishu region of Aichi Prefecture. Founded 150 years ago, it has preserved its traditions through six generations. It’s one of the few places in Japan where you can see—and experience—the slow, natural fermentation of mame miso in traditional kioke.*1
A truly unique destination exclusive to Ama City.
*1 Kioke (wooden barrels) are large casks made of natural wood. Over time, the microorganisms living in the wood interact with the ingredients, creating a mellow, richly layered flavor through slow fermentation.

Mame miso, cherished by famous warlords Oda Nobunaga, Toyotomi Hideyoshi, and Tokugawa Ieyasu, was used as a vital food supply.
More than just a seasoning, it has been passed down as an essential part of Japan’s culinary and cultural heritage.
Mame miso is made with only soybeans, salt, water, and koji mold. Over time, each kura (fermentation house) develops its own kuraguse—a unique character shaped by local microorganisms and traditional methods. Experience the rich, complex flavor specific to this place with all your senses.

The Shippo-yaki Art Village is the only place in Japan where you can enjoy year-round exhibitions, live demonstrations, and hands-on workshops in the traditional art of Shippo-yaki.
Not only can you admire exquisite handcrafted pieces, but you’ll also see the nationally recognized techniques of Owari Shippo up close—and even make your own one-of-a-kind work.
Your Experience Includes
Wired cloisonné (Yūsen Shippo) is a traditional craft where silver wires are used to create intricate designs on a metal base, then filled with colorful glass enamel and fired to achieve a stunning finish.
During the hands-on workshop, families select their own colors and patterns, watch the magical moment when the hues change in the kiln, and take home their finished piece.
Owari Cloisonné is a recognized traditional craft of Japan. Its stunning craftsmanship is displayed not only at the UNESCO World Heritage site Nikkō Tōshō-gū Shrine but also in museums worldwide, such as the Victoria and Albert Museum in the UK, where it is appreciated for its artistry and cultural value.
